Recipe

These are my favorite muffins and my family can't get enough of them. Healthy...yummy. :) Plus....it can help you get some grains.

Carrot Ginger Muffins
(from Sparkrecipes.com)

1 c whole wheat flour
1 1/2 tsp baking powder
1 egg, beaten
1/3 c brown sugar
1/3 c white sugar
2 T butter
1 large carrot, finely shredded
1/4 c skim milk
1 tsp fresh ginger, minced or shredded
1/8 tsp cinnamon
1/8 tsp dry powdered ginger
1/8 tsp allspice
1/8 T vanilla
optional: 1/2 cup raisins

Preheat oven to 350.
Cut butter into small cubes and let soften.
In a large bowl, combine flour and baking powder with the butter, using a pastry cutter or fingers to break down the butter into fine pieces mixed with the flour.
Add sugars, ginger, carrot, milk, beaten egg, vanilla and spices to the mixture and mix thoroughly with a wooden spoon or spatula.
Add raisins, mix.
Bake for 25 minutes.

WEEK #1 POINTS

Week 1 is over! Woo Hooo! Hopefully you've all done well and feel good about the changes that you are making. From someone who is completely addicted to sugar (and if you know me you know how much of an understatement that is) I can say that it is hard. But it's possible. Keep up the good work. I promise that it will pay off. :)

IT'S COMING!!!

A new challenge is about to begin- Monday, August 22nd! If you're interested in feeling great, dropping the pounds and a chance to win some moola this challenge is for you!

Here's how the contest works:

Challenge Entry Fee: $20
All money is due on or before Monday, August 22nd.
This can be mailed or dropped off to me. If you need my address contact me (info is at the end of this post)

100% of this money is used for prize money.


Weigh-In:
All participants will weigh in on their own scales Monday, August 22nd.

Daily points are given for:

20 pts: Exercising (minimum of 30 consecutive minutes) per day
20 pts: Self control. No FIGS (fried food, ice cream, goodies, soda)
10 pts: Drinking 64 oz of water per day
10 pts: No eating after 8pm
10 pts: 3 servings of whole grains per day
10 pts: 5 servings of fruits/veggies per day

**80 points possible each day. 560 points possible each week.**

Freebies:
Each contestant is given 1 "freebie" to use in each category per week. When a freebie is used, points are still given as if they had completed that requirement for the day. Freebies cannot be carried over to other weeks. You use them or lose them each week. 1 extra freebie is given for turning in the previous weeks points by Monday night.

Weight Loss:
It's important to keep your weight loss private. This may be the only card you have to play in the end. It's possible for participants to have earned the maximum points possible by the end of the challenge....so it may come down to weight loss. At the end of the challenge everyone will report their percentage of weight lost.

At the end of the challenge, the total weekly points will be added to the weight loss points. You will receive 10 points per % lost. (example: 12% weight loss = 120 points.)

Important note: You must weigh in on the same scale at the beginning and end of the challenge-at the same time of day, wearing the same amount of clothes....or lack thereof.

Blog:
A running point total will be posted each week, so the participants can see how they are doing compared to everyone else. This calculation will not include weight loss points until the end of the challenge. Weekly points need to be reported to me by email and I will post the group information. 1 extra freebie is given for turning in the previous weeks points by Monday night.
